This is what happens when you leave the garden unchecked for a couple days! We picked over 11 pounds of produce last night, and more than half of that was just cucumbers. The garden is doing great this year, and we are excited to keep experimenting and learning. Like learning that I am terrible at container gardening (I forget to water them) and should just stick with the raised beds and our established irrigation system. Or that the chipmunks really like to chew on my tomatoes, but they only eat half the tomato and leave the other half for the ants. I finally got some bird netting on the tomatoes last night, which should hopefully help keep out any critters that are snacking on them.

I will be eating lots of cucumbers this week for sure! I found a recipe for cucumber salsa that I want to try, since Bug doesn’t eat tomatoes (and since all mine have been eaten by chipmunks!). This comes from Bon Appetit’s website:

Ingredients

  • 2 cups finely diced peeled cucumber
  • 1/2 cup finely diced red onion
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped fresh mint
  • 1 jalapeño (with seeds), finely diced
  • 3 tablespoons fresh lime juice
  • 1 tablespoon vegetable oil
  • Kosher salt and freshly ground black pepper

Preparation

Mix first five ingredients in a medium bowl. Stir in lime juice and oil. Season to taste with kosher salt, freshly ground black pepper, and more lime juice, if desired.
